Pasta "the different NORMA" original recipe of "a mountain of excellence"


Today we publish a small recipe to be enjoyed:

PASTA ALLA "DIVERSAMENTE NORMA"

This recipe takes its cue from the typical recipe of "pasta alla norma", and as in fact we called it "Different Norma" and it is really delicious, let's start with the ingredients:


For 4 people:

- 1 clove of garlic

- 300 grams of pasta of your choice

- 1 ripe eggplant (possibly Sicilian) ;-)

- fresh tomato sauce if possible

- oil for frying the aubergines to taste

- 40 grams of Parmigiano Reggiano

- Salt and Pepper To Taste.

- a sprig of basil


Preparation:

Put the oil in a saucepan, if necessary, mix the olive oil with other oil for frying (for a taste), insert the garlic clove with all the peel, cut the eggplant into cubes and fry them in boiling oil. As soon as they are fried, drain and cool on absorbent paper or a colander.

Take a preferably narrow and high container and put the raw tomato sauce, salt, pepper, parmesan and 3/4 basil leaves, just cooled and drained, add the aubergines and blend everything, it will become a nice consistent orange cream from the incredible taste, the mix between raw tomato and fried aubergines give a mouth-watering aroma to the dish, obviously Sicilian basil cannot miss to season everything, for those who love it, a final grind of pepper can also be good , enjoy your meal.
