Dario: My passion for sushi was born in 2018, the idea of combining the art of sushi with the ingredients and flavors of my land, Sicily, has always fascinated me. I wanted to create something that represented both the sophistication and elegance of Japanese sushi, as well as the authenticity and richness of Sicilian cuisine. From these reflections was born the "sushi pae-sano". It's a play on words that combines 'paese', referring to my land, and 'sano', alluding to the healthiness of the food. So I started experimenting, combining Japanese culinary techniques with the fresh and flavorful ingredients of Sicily. The result was a success: a unique gastronomic experience that expresses love for my land and respect for Japanese tradition.


Question: What challenges did you have to face to bring sushi to Cammarata and San Giovanni Gemini?


Dario: The greatest challenge was certainly presenting something so different from what people were used to. Sushi is very distant from Sicilian culinary tradition, but my conviction was that, if well-executed and presented in the right way, it could also win over the most traditional palates.


Question: Can you tell us about your experience with Chef Hirohiko Shoda?


Dario: Participating in Chef Hiro's lessons was an unforgettable experience. Not only did I learn culinary techniques and authentic recipes, but I also deeply understood the meaning of discipline and respect in Japanese cuisine. The lessons I learned from him have helped me shape my vision of sushi.


Question: What is the secret of your success?

Dario: I believe that the secret lies in always being true to ourselves, in respecting traditions, but at the same time not being afraid to experiment and innovate. I have been lucky enough to work with some of the best culinary minds in the world, but at the end of the day, it's the love for what I do that guides me.


Question: What are your plans for the future?

Dario: I would like to continue evolving, learning, and experimenting. I would love to see the sushi pae-sano become a symbol of innovation and cultural fusion not only in Sicily but beyond. And of course, continue to offer my guests a unique and unforgettable culinary experience at San Martino De Kamerata.
